Borage, also known as star flower, is an annual herb in the plant family Boraginaceae. Borage belongs to the Mediterranean area.
Borage grows in most of Europe, Denmark, France, Germany and remains in the garden from year to year by self-sowing. The leaves of borage are edible, and are grown in gardens in parts of Europe.
Borage is also grown commercially for borage oil extracted from its seeds. The beautiful blue flowers are edible, and decorate super nicely on summer salads.

Micro Greens Pro Tip:
Start by filling 2-3 cups of cocos, or other growing medium in your growing tray, make sure your medium is not too moist. Leave your seeds in water for 12-24 hours, then spread them out in an even layer and cover your growing medium without clumping too much. Then cover your tray and lift every 2 days to oxygenate the seeds. After 5-8 days, the root will have taken hold and you can now place it on the windowsill. Make sure not to over- or under-water, and after 15-20 days, your fresh borage microgreens can be enjoyed!

Cucumber is a delicious addition to smoothies, but also as a sweetener in salads or lighter dishes.
